Looking for a recipe for “Meat-free Monday”? Look no further! This recipe will satisfy the tummies of vegans and meat eaters alike, and it’s so easy to make. It also doubles easily if you need it for a large gathering. I get requests for this recipe EVERY single time I make it, and those asking for the recipe are not vegan. Almost everyone nowadays knows they should eat less meat, but without having great tasting alternatives, they are reluctant to do so. The taste and texture of these sloppy joes are outstanding, and I’m willing to bet if you don’t tell anyone, they won’t even know it’s vegan. I dare you to try it!

Sloppy Joes

- 6 oz Mild Banana Pepper Rings
- 8 oz Roasted Red Bell Pepper Strips
- 1 cup chopped onions
- 2 TBS Minced Garlic
- 1 package Gardein Ultimate Beefless Ground (Freezer Section of Favorite Grocery Store)
- 3/4 Jar Newman's Own Organic Sackarooni (23.5 oz jar - You may end up using more - but let the recipe cook first and determine if you need more sauce)

- Drain banana peppers and red peppers in wire mesh strainer and pat dry with a paper towel.
- Place banana peppers and red peppers in a mini food processor and chop.
- Saute’ peppers, onions, and garlic in Instant Pot (or on stove top) for 5-10 minutes
- Add Gardein and Sockarooni sauce to Instant Pot and stir well. (If using a slow cooker, add all ingredients to slow cooker)
- Slow cook for 2 - 2.5 hours, stirring occasionally. (If you are using a slow cooker, set it to high)
